African Cuisine - Mishywa (Salmon Salad) and Doro Wat
Mishywa is an African dish made from grilled salmon mixed with capers, fresh tomato, and sweet pickled red peppers served on a bed of spinach with a tomato vinaigrette and avocado wedge. The flavors of tomato, cumin, lemon, and garlic make this salad tangy and spicy but light and delicious. Doro Wat is an Ethiopian classic. Chicken is stewed in a spicy, deep red tomato-curry sauce and served with a traditional hard-boiled egg and coconut basmati rice. Students will set up/clean up their workstations. Course fee includes all supplies.
